My Favourite Breakfast

I've been working from home all week so I've been treating myself to the most amazing breakfasts. My favourite has to be buckwheat pancakes, stewed plums and soya yogurt! Absolutely delicious! Would you like the recipe? Oh, go on then...this should make enough for 1-2 people depending how hungry you are!

100ml soya or rice milk
2 tbsp buckwheat flour
1 egg

Blend together and cook in a small frying pan until nice and golden.
Make sure the pancakes are thin or they'll taste like rubber!
Serve with stewed plums and yogurt. If you need a little more sweetnes sprinkle with xylitol which is a healthy alternative to sugar.

To stew plums just chop them, remove the stones and heat with a little water until nice and soft. You can even serve the pancakes with savoury dishes. Last week I had some leftover chickpea and spinach curry and I made one half into a soup and the other into wraps with pancakes.
